Oatmeal is my weekday staple, but when the weekend rolls around, I love to switch it up! Recently, we had guests over—friends who rarely eat plant-based—and I made this flavor-packed tofu scramble. I already knew it was delicious, but I was still surprised when they raved about how much it tasted like a classic egg scramble!

🍽 Ingredients
Don’t stress about measurements—chop what you like and toss it all in. Customize with your favorite veggies! Here’s what I typically use:
🥦 1 block of extra firm tofu (drained)
🌿 A handful (or two!) of spinach, chopped
🍄 A few mushrooms, chopped (shiitake are my go-to!)
🧄 A dash of garlic powder or 1 clove minced garlic
✨ A good sprinkle of turmeric (adds color & anti-inflammatory benefits)
🧀 A small handful of plant-based cheese shreds (I love Miyoko’s Plant Milk Cheddar)
🌶️ Salt, pepper, & red pepper flakes to taste
🍞 Whole wheat pita, English muffins, or toast (check that the first ingredient says “whole”)
🔥 Directions
1️⃣ Sauté the Veggies – Toss spinach and mushrooms into a non-stick or cast iron pan. I skip oil and just add a splash of hot water from my kettle to soften the veggies. Stir in garlic.
2️⃣ Crumble the Tofu – Gently squeeze excess water from the tofu and crumble it into the pan by hand.
3️⃣ Season & Stir – Sprinkle in turmeric and stir. Add salt, pepper, and red pepper flakes to your taste.
4️⃣ Melt in the Cheese – Add your plant-based shreds and stir until melted and creamy.
5️⃣ Serve & Enjoy – Pile into a warm pita or top your toast or muffins.
