Chilled Summer Gazpacho is a fresh, no-cook recipe packed with veggies, herbs, and healthy fats. Perfect for hot days and easy to prep ahead—it’s summer in a bowl.

  • English cucumber, 1 (optional: slice extra for garnish)
  • Organic ripe tomatoes (chopped), 2½ pounds
  • Red bell pepper, ½ pepper (stemmed and seeded)
  • Red onion, ¼ small (rinsed)
  • Garlic cloves, 2
  • Fresh cilantro, ¼ cup (chopped) plus more for garnish
  • Sherry vinegar or red wine vinegar, 3 tbsps
  • Extra virgin olive oil, ½ cup, plus more for drizzling
  • Sea salt, 1¼ teaspoons
  • Freshly ground black pepper, ¼ teaspoon
  • Cherry tomatoes, for garnish
  • Italian parsley and chives, chopped, for garnish

Instructions

  • Dice a few pieces of cucumber and set aside for garnish. (Use extra cucumber if needed for a more generous topping.)
  • Peel the remaining cucumber and cut into chunks.
  • In a blender, combine cucumber chunks, chopped tomatoes, chiles or bell pepper, red onion, garlic, cilantro, vinegar, olive oil, salt, and pepper. Blend until smooth. Blend on low speed until smooth to avoid incorporating too much air. If needed, pulse or gradually increase speed just enough to fully blend without making it frothy.
  • Taste and adjust seasoning if needed. Chill in the fridge for at least 2 hours.
  • When ready to serve, top with reserved cucumber, cherry tomatoes, fresh herbs, a drizzle of olive oil, and a crack of black pepper.
