Ingredients
- Rolled Oats, 1 cup uncooked
- Organic peanut butter, ½ cup (crunchy or creamy)
- Flaxseed meal, ½ cup
- Maple syrup, ⅓ cup
- Chocolate chips or cocoa nibs, ⅓ cup
- Vanilla extract, ½ tsp
- Cinnamon, ½ tsp (optional)
- Hemp seeds, 2 - 3 Tbsp (optional)
- Chia seeds, 1 - 2 Tbsp (optional) + extra peanut butter to prevent dryness
Instructions
- In a large bowl, mix together the rolled oats, flaxseed meal, chocolate chips or cocoa nibs, and optional hemp or chia seeds.
- Add the peanut butter, maple syrup, vanilla extract, and cinnamon (if using). Mix until everything is well combined.
- If the mixture feels dry, add 1–2 teaspoons of peanut butter to bind (especially if adding chia seeds).
- Scoop about 1 tablespoon of the mixture, roll into a ball, and repeat until you have 12–15 bites.
- Place the bites on a baking sheet lined with parchment paper and freeze for 30 minutes to firm up.
- Store the bites in an airtight container—fridge for up to 1 week, freezer for up to 3 months.
