This is the breakfast that does the work while you sleep. You stir it together at night, and by morning you have a thick, creamy pudding that tastes like a treat but eats like a powerhouse.   • Base (stir in the night before)
    • Chia seeds, 3 Tbsp
    • Unsweetened soy milk, 1 cup (reduce to 3/4 cup if using frozen berries)
    • Cinnamon, a generous shake
    • Organic cacao powder, 1 Tbsp (optional, for a chocolate version)
    • Flaxseed meal, 1 Tbsp (optional)
    • Berries, a big handful (frozen, if adding overnight)
  • Add in the morning
    • Hemp seeds, 1 Tbsp
    • Walnuts or sliced almonds, a small handful
    • Fresh fruit, any you like

Instructions

  • In a jar or bowl, whisk the cacao into the soy milk until smooth so it does not clump.
  • Add the chia, cinnamon, and flaxseed meal. Stir well, wait 5 minutes, then stir again to break up any clumps.
  • Stir in frozen berries now if using. Cover and refrigerate overnight, or at least 4 hours.
  • In the morning, top with hemp seeds, nuts, and fresh fruit. Add a splash more soy milk if you like it looser.
